The Easiest Mediterranean Bowl on the Internet

Servings: 4 Prep Time: 10 Min Cook Time: 20 Min Total Time: 30 Min

Ingredients for the Cauliflower Rice:

2 10ox bags of frozen riced cauliflower

1/2 tsp of sea salt

1/2 tsp of black pepper

1 tsp onion powder

1 tsp of dried parsley

2 garlic cloves minces

2 Tbs of olive oil

Ingredients for the Mediterranean Chicken:

1 Tbs of sea salt

2 tsp black pepper

2 tsp dried basil

4 tsp dried oregano

1 tsp dried thyme

4 tsp onion powder

4 tsp garlic powder

2 tsp dried dill

2 tsp dried parsley

2 tsp dried onion flakes

2 tsp dried rosemary

1 tsp cinnamon

1 tsp nutmeg

1 lb of boneless skinless chicken breasts

Ingredients for the Cucumber, Tomato & Onion Salad:

1/2 cup of olive oil

1/4 cup balsamic vinegar

2 cloves of garlic, minced

2 tsp dried Italian seasoning

1/4 tsp black pepper

1/4 tsp sea salt

2 small cucumbers or 1 large cucumber

2 cups of grape tomatoes cut in half

1/2 medium purple onion, sliced thinly

Directions for the Cauliflower Rice:

  1. In a large skillet, or wok add in olive oil and garlic. Over medium/high heat sauté until garlic is fragrant.

  2. Once garlic is fragrant, add in frozen cauliflower. Toss to coat. Cook the cauliflower for 10 minutes to until mostly thawed.

  3. Add remaining ingredients and mix until evenly distributed. Cook for 5 additional minutes.

Directions for the Mediterranean Chicken:

  1. Combine all seasoning ingredients in a mason jar. Shake to combine

  2. Take chicken breasts and cut them into cutlets. Season each cutlet with 1 tsp of the greek seasoning (1/2 tsp per side).

  3. In a large skillet add 1 Tbs of olive oil over medium high heat.

  4. Once pan is hot, add seasoned chicken and cook for 3-4 minutes per side or until chicken is cooked through.

Directions for the Cucumber, Tomato & Onion Salad:

  1. Take all ingredients and add them to a large bowl (preferably one with a lid).

  2. Stir to combine.

Bowl Assymbly:

  1. Add 1 cup of the cauliflower rice to a meal bowl.

  2. Top with one chicken breast sliced.

  3. 1/4 - 1/2 cup of cucumber, tomato & onion salad

  4. Top with any additional add ons

Add Ins:

  • Kalamata Olives

  • Hummus (find my recipe here)

  • Peppercinis

  • Fresh Tomato & Cucumber

  • Roasted Chick Peas
