Chocolate Almond Butter Banana Bread Cake

Ingredients For The Cake:

3 medium bananas mashed

1 cup 100% Pure Maple Syrup

1 cup melted Perfect Supplements coconut oil (buy here

3 large eggs

3 cups of Quaker Old Fashioned Oats, blended into oat flour (buy here)

1 tsp of baking soda

3 Tbs Bob's Red Mill Tapioca Flour (buy here)

1 1/2 cup of Califia Farms Unsweetened Almond Milk (buy here)

Ingredients For The Frosting:

1 can of full fat coconut milk (using only the cream from the can, reserve the water for other recipes.

1 bag of Enjoy Life dark chocolate chips (buy here)

1 cup almond butter (find my easy 1 ingredient recipe here)

Directions:

Mash bananas in a large mixing bowl. Add in eggs and mix together with a hand mixer. Add in almond milk, coconut oil and maple syrup and whisk together. Add in oat four, tapioca four and baking soda and mix until batter is formed. Pour batter into two greased 8 inch round cake pans. Bake at 350 degrees F for 20-2 minutes or until center comes clean with a toothpick. Allow layers to cool before frosting.

While cake is cooling make the frosting. Add chocolate chips, coconut milk, and almond butter to a microwave safe bowl. Melt in 30 second intervals until the mixture is smooth. Add some frosting in between the two layers of cake. Use remaining frosting on the rest of the cake. Place in the refrigerator for 20 minutes to set. Slice into 10 equal pieces and enjoy!
