Chewy Cacao Mocha Bars

Ingredients for the Mocha Cookie Dough Layer:

1 cup of almond flour

1 /2 cup of coconut oil softened

3/4 cup of Madhava cocoanut sugar

1/2 tsp sea salt

2 packets of Four Sigmatic Instant Mushroom Coffee

2-3 Tbs of unsweetened dairy free milk of choice

1/2 tsp vanilla extract

Ingredients for the Chewy Cacao Layer:

1 Bag of Nutsóla Superfood Mix in Cacao almond (use code KailiMills15 at checkout)

Directions:

  1. Pour the entire bag of Nutsóla superfoods mix into a large bowl. Add in 1/4 cup of liquid of choice (water works fine) and mix until a sticky/crumbly mixture forms. The mixture should be wet enough to be pressed together and stick.

  2. Press the Nutsóla mix into an 8x8 baking sheet lined with parchment paper. Set the superfood layer aside while you mix the mocha cookie dough layer

  3. In a separate bowl add in almond flour, Four Sigmatic instant coffee, coconut sugar and sea salt and whisk to combine.

  4. Add in coconut oil, vanilla extract and dairy free milk and mix together to form a cookie dough. Take the cookie dough layer press it on top of the nut sola layer.

  5. Once the dough is evenly distributed and one even layer is formed, take the baking dish and place it in the freezer for 30 minutes to set. Once bars have set, slice into 12 even squares and top with flaky sea salt.
