Soft & Fluffy Pillow Sugar Cookies

Ingredients for the Cookies:

2 cups of raw sugar

1 cup of ghee or coconut oil

3 eggs

6 Tbs of unsweetened dairy free milk of choice

5 cups of gf all purpose flour of choice

1/2 tsp sea salt

5 tsp baking powder

Ingredients for the Frosting:

4 oz of Plain Kite Hill cream cheese

1/4 cup of ghee

1 tsp of vanilla extract

3 cups of organic powdered sugar

3 tbs of unsweetened dairy free milk of choice

Directions:

Preheat oven to 350˚F. Cream together sugar, ghee, eggs and milk all together in a large bowl. Add in flour, salt and baking powder and combine. Once cookie ingredients are well combined place the dough on a well floured surface. Roll out the dough until it is 3/8 of an inch thick. Cut Cookes out with a round cookie cutter and place on a lightly greased baking sheet. Bake for 10 minutes. Be sure to remove the cookies from the pan immediately in order to keep them from continuing to bake on the hot cookie sheet.

While the cookies are cooling make the frosting. Combine all the ingredients into a large bowl mix together until a light and fluffy frosting has formed. Frost cookies once they have completely cooled. Top with desired sprinkles.
