Oat Cluster Cereal

Introducing you to the healthiest cereal around! So what sets this cereal apart from the rest? Below is a breakdown of the ingredients and why each one of them benefits your body:  

 

Oats - Rich in fiber, loaded with antioxidants, reduces LDL (bad) cholesterol, stabilizes blood sugar, improved digestion and causes you to feel satisfied longer.

Chia Seeds - High in Omega-3 fatty acids, raises HDL (good) cholesterol, HIGH in fiber, loaded with antioxidants, very nutrient dense.

Collagen - Aids in digestion and heals your gut, good source of protein, reduces wrinkles and increases skin elasticity, reduced joint inflammation, builds thicker hair and stronger nails, keeps you feeling full longer, hides cellulite, prevents and reduces arthritis, stabilizes blood sugar, prevents injury and repairs muscles and improves thyroid health.

Almond Butter - nutrient dense, good source of healthy fats, rich in vitamin E and magnesium, aids in lowering cholesterol, boosts heart health by promoting healthy blood flow and good blood pressure.

Pure Maple Syrup - lower in glycemic index than processed sugar. This helps your insulin to spike less thus slowing down your bodies chances of converting sugar into fat.

Coconut Flour - rich in fiber, protein and health fats. Free from wheat and other grains that can cause bloating in some intolerant individuals. Also low in sugar, digestible carbohydrates and calories. Has a low score on the glycemic index (see above explanation for maple syrup).

Coconut Milk - High in medium-chain triglycerides (MCT's) with are good healthy sources of fats. Good source of vitamins. 

Cinnamon - aids in lower blood sugar and reduces heart disease risk factors.

Ingredients:

2 cups of Quaker old fashioned oats dry

3 Tbs of chia seeds

1 tsp cinnamon

2 scoops of Further Food Collagen (buy here - use my code MEASUREMEWHOLE10 to save money)

1/2 cup of natural smooth almond butter (find my recipe here)

1/2 cup of So Delicious unsweetened vanilla coconut milk

1/3 cup of pure maple syrup

1/2 cup of Bob's Red Mill coconut flour

Directions:

In a large bowl mix almond butter, maple syrup, and coconut milk together. Add in oats and mix until combined. Add in chia seeds, collagen and cinnamon and mix until combined. Add in coconut flour last and mix until combined. The mixture should be clumpy. Take a large cookie sheet and line it with parchment paper. Scoop out the mixture and drop onto the parchment paper lined pan. Spread the cereal mixture out all over the pan. It's okay if there are clumps. Bake at 350 degrees F for 15 minutes. After 15 minutes take out of oven and mix the cereal around. Bake for an additional 10 minutes. Remove from oven and allow the cereal to completely cool. Store in an airtight container. Serve with your choice of diary free milk or you can use it just like granola and put it on top of yogurt. 1/4 cup is one serving.
